Pink Pineapple Exists and We Want Some Now!

Here’s a tip on making a beautiful fruit platter: Use an assortment of colors. For instance, mix the green of honeydew, the red of strawberries, orange of cantaloupe, yellow of mangos, the purple of grapes, and the pink of pineapples. Yes, that’s right. Del Monte has released pink pineapples. The color isn’t from dye; they are actually grown like that. Then they are handpicked in “ultra-limited harvests, uniquely and specially grown by the expert growers,” according to Del Monte, which explains the hefty price tag of $49 for one pineapple.

Introducing the PinkGlow Pineapple

Experience a taste of a remote paradise where compasses spin wildly, life is over-the-top, and pineapples are pink,” reads the description on Del Monte’s Pinkglow pineapple website. It adds that these pink pineapples possess “a delicious and unique taste” with notes of “candy pineapple aromantics.” This means it’s less sour than the classic yellow pineapple while being juicier and sweeter. The pink color in the pineapple comes from a chemical compound called lycopene, which is found in grapefruit, tomatoes, and watermelon. [1]

Pinkglow pineapples went into development in 2005 and earned FDA’s approval in 2016. They are grown on one farm in Costa Rica, and it takes about two years to produce each one. Of course, this pineapple would make a stunning addition to any fruit tray, but consider pink pineapple upside-down cake, candied pink pineapple, grilled pink pineapple, and pineapple cocktails! They are available for purchase online, but certain grocery stores are now carrying them as well. [3]

Easy Grilled Pinkglow™ Pineapple with Vanilla Ice Cream

Recipe by Alyssa Fusco from Macaronie Bites

INGREDIENTS

  • Del Monte® Pinkglow™ Pineapple
  • Honey
  • Vanilla Ice Cream
  • Coconut Flakes

INSTRUCTIONS

  1. Grill your pineapple for 2–3 minutes on each side on a grill. Remember to spray the grill with non-stick spray before adding the pineapple. 
  2. Once there are grill marks on the pineapple slices, place them into a bowl, top with ice cream, drizzle with honey and sprinkle with some coconut. Serve while the pineapple is still hot and the ice cream is still cold. 

PinkGlow Pink Pineapple Salad

INGREDIENTS

  • ½ Pinkglow Pink Pineapple, cut into triangles
  • 1 cup watercress
  • ½ shelled edamame
  • ¼ pomegranate arils
  • 1 diced avocado
  • 2 tbsp crumbled feta cheese

DIRECTIONS

  1. Toss all of the ingredients together and serve with your favorite salad dressing or plain.

Pinkglow Regal Ritas

Recipe by Del Monte

INGREDIENTS

  • 4 cups 1” chunks Pinkglow™ Pineapple, frozen
  • 2 cups Blanco or silver tequila
  • 1 cup fresh lime juice
  • ¾ cup orange liqueur, such as Cointreau or orange Curaçao
  • ¾ cup pure cranberry juice 
  • ⅓ cup coarse salt, such as kosher or crushed Himalayan pink salt
  • Finely grated zest of 1 lime
  • 2 tablespoons agave syrup
  • 9 Pinkglow™ Pineapple wedges
  • 9 lime wheels and small cranberry skewers for decoration

DIRECTIONS

  1. In a blender, combine the pink pineapple, tequila, lime juice, orange liqueur, and cranberry juice. Blend until the cocktail is smooth.
  2. On a small plate, stir lime zest and salt together. Spread agave syrup on another small plate. Rim the cocktail glasses with agave syrup, then with the lime salt.
  3. Pour the blended cocktail into glasses and garnish with Pinkglow pineapple wedges, lime slices, and cranberry skewers.

Keep in mind that pink pineapples contain all of the health benefits of regular pineapples. That means that they are packed with nutrients, antioxidants, and compounds, including vitamin C and manganese. Pineapple enzymes may even help with digestion, nutrients to support one’s immunity, among many other benefits. Best of all, they are delicious, and in the case of pink pineapple, extremely pleasing to the eye. [4]
